{Common Kitchen}: Chaczapuri
Culinary workshop with GALAS collective and guests with experience of forced migration
At the upcoming Common Kitchen event, we will meet Khedi Alieva and make a Chechen-style Khachapuri together.
Khedi Alieva is an activist, social animator. Originally from Ichkeria (Chechnya), she has been in Poland since 2013. She graduated from the Grozny State University in Pedagogy and Law Faculty and is a member of the Council of Immigrants and Immigrant Women in Gdansk. President of the Kobiety Wędrowne [Wandering Women] Foundation and manager of the Bistro-Store Kitchen of Kobiety Wędrowne [Wandering Women]:
'Khachapuri is one of the most recognisable and beloved dishes of Sakartvelo (Georgian) cuisine, which has been popular in Georgia and other countries of the Caucasus for centuries. The original name chachapuri comes from two words: 'chacho', which means 'cheese' in Georgian, and 'puri', which means 'bread'. It is, therefore, literally 'bread with cheese', although its form and composition may vary from region to region. Although primarily associated with Georgia, Khachapuri has been popular for centuries throughout the Caucasus, including Chechnya. The region, rich in its own culture and culinary traditions, has drawn inspiration from neighbouring countries. Georgian Khachapuri has become the dish commonly prepared in many Chechen homes. The common cultural roots of the Caucasus have earned Khachapuri a place in Chechen cuisine, served at family gatherings and festive feasts. For Chechen women and Chechens who have had to leave their homes, cuisine - including the preparation of Khachapuri - has become one of the tools for maintaining ties with the homeland and its heritage.'
If the weather is good, the workshop will be held outside, in the park surrounding the Ujazdowski Castle, by the oven. Please ensure that your clothing is appropriate for the prevailing weather conditions.
